Most school curricula have a strong taste for words (literacy) and numbers (numeracy), but almost none for flavour (gustacracy). One rather unfortunate outcome of the absence of tasting skills in schools is that students are needlessly starved of more regular opportunities to experience feelings such pleasure and wonder, as well as to act on desires such as curiosity. Seasoned by flavour theorists such as Nik Sharma and infused by sensory education programmes such as SAPERE and Flavour School, the Tastemobile project notices mobile educational traditions (such as Bookmobiles) and mobile gustatory traditions (such as ice cream trucks) and combines them with purpose: To help promote and develop tongue taste. Viva la gustocracy!
